Zuppa Toscana!

Spicy Sausage, Spinach and Potato Soup if you like Olive Garden’s Zuppa Toscana you’ll love my version it’s simply delicious. I used spinach but you can use kale like the famous chain does, either way the potatoes, bacon and Italian sausage is what makes this soup awesome.

1 lb of spicy Italian sausage
1 c heavy whipping cream
5 slices of cook bacon, broken into little pieces, or chopped
28 oz chicken stock
3/4 c of water
3 large russet potatoes, washed, peeped and chopped in to 1 inch chunks
4 cl garlic, minced
1/4 c onions, diced
1 ½ c of spinach, chopped or torn
1/4 t red pepper flakes
1/4 t Salt
1/4 t black pepper

Brown the sausage in a large pot over medium low heat. Drain and set aside. Add sausage, potatoes, onions, garlic, salt, pepper, red pepper flakes, water and stock to a large pot. Stir well. Turn to high and bring to boil. Reduce heat to low and cook for 30 minutes. Add cream, spinach and bacon and stir ingredients well. Place lid on pot and cook for 5 more minutes. Enjoy.
