These are very tasty, don’t worry if they get a little brown around the tips you have to let them cook long enough for them to crisp up. I really enjoy using sweet potatoes in savory dishes like this and after this you might too.
Crispy, Garlic and Parmesan Sweet Potato Fries
3 medium sweet potatoes
2 tablespoons olive oil
3 cloves garlic, pressed
2 T grated Parmesan
¼ t corn starch
½ t dried parsley
1/4 t salt
1/8 t black pepper
1/8 t cayenne pepper
Preheat oven to 425. Prepare a baking sheet by lining it with a silpat or light brushing with oil. Wash, peel and slice potatoes in to ¼ inch French fry shapes. In a large bowl add the corn starch, olive oil, salt, parsley and peppers. Spread the potatoes in a even layer on prepared baking sheet.
Place potatoes in a single layer onto the prepared baking sheet. Add olive oil and gently toss to combine; season with salt and pepper, to taste. Place into oven and bake for 35-40 minutes, or until golden and crisp, tossing occasionally.
Bake for 15- 20 minutes, flip and sprinkle on garlic then bake for 15 – 20 minutes more or until they are crispy, look dry and become brown around the edges.
After potatoes are done add to a bowl and toss with parmesan cheese. Serve right away. Enjoy.
