These are so simple, but they pack a lot of flavor and are always a hit with my friends and family. Radishes are not used enough in my opinion, I love’em. They are fantastic and add a nice crunch and just a bit of bite to lots of dishes.
Serves 4 – 5
1 1/2 pounds flank steak, thinly sliced against the grain
8 – 10 corn tortillas
5 radishes, diced
1 T vegetable oil
3 oz Queso Fresco cheese
3 green onions, sliced
3 T chopped cilantro
2 T plus 1 t lime juice
1 jalapeno, diced
1/4 t salt
1/4 t black pepper
Add radishes, cilantro, salt, and lime juice to a bowl. Mix well, check for seasoning. Cover and refrigerated until rest of the stuff is ready.
Warm tortillas on a grill with a little oil on both sides until just a little brown.
Season steak with salt and pepper. Dip paper towel in a little oil and wipe on grill pan, or in non stick pan. Turn heat to medium.
Let warm for about one minute. Add steak and cook until desired doneness flipping once. Remove from heat and let rest for a 8 minutes.
Make tacos by Adding equal amounts of steak, and cheese to each taco. Spoon over desired amount of salsa. Enjoy.
