Spinach and Onion Omelet

2 T Mozzarella cheese Blend
2 eggs, beaten
2 T diced onions
Pinch Italian seasonings (optional)
Salt to taste
Black pepper to taste
¼ cup frozen spinach
1T vegetable oil
2 t vegetable oil

Add 1 T oil to a small nonstick pan over medium heat. Sauté onions until translucent, add frozen spinach, and pinch salt and cook for
about 3 minutes.

Remove from heat. Add 2 teaspoons oil and let it get hot for 1 minute. Reduce heat to low and add eggs. Let bottom cook, when bottom is brown to your taste, flip, and add sautéed vegetables and cheese.

Fold over omelet, and flip once it you want the top a little more golden. Remove to a plate and garnish with more cheese and parsley if you desire. Enjoy.
