Cheese Steak Stuffed Peppers

6 oz. Roast Beef, thinly Sliced
8 Sl Provolone Cheese
2 big Green Bell Peppers
1 small Onion, chopped
6 oz. Mushrooms, sliced
3 T Olive Oil
2 cl garlic, chopped
½ salt
¼ t black pepper
¼ t cayenne pepper

Preheat oven to 350° Cut bell peppers in half across the long way. Remove seeds and ribs. In a big pan under low heat add the oil, garlic, onions, and the mushrooms.

Cook for 25 minutes stirring occasionally. Drain remaining oil. Add beef and mix well. Lay a slice of cheese over the bottoms of the peppers. Stuff empty pepper evenly with mixture and place a piece of provolone over the mixture.

Bake for 20 -25 minutes or until cheese is melted and golden. Enjoy.
