Blue Cheese is on of the things I enjoy. Mixed with cream cheese makes the flavor a bit milder but still robust. The quality of roast beef is important here because there’s not a lot of other stuff on this sandwich. The addition of a little sweet onion puts this thing over the top.
Grilled Blue Cheese and Roast Beef Sandwiches
Makes 2 Sandwiches
4 Slices sour dough bread
6 oz roast beef
2 ¼ T blue cheese or feta
2 ½ T softened cream cheese, or cream cheese spread
2 T sliced Vidalia onions
1 T softened butter, can use vegetable, or olive oil instead of butter.
1/8 t black pepper
In a bowl add softened cream cheese spread blue cheese and black pepper and mix until smooth.
Butter one side of each piece of bread
Spread blue cheese mixture over one side of each slice of bread. Get a pan over medium low heat. Add one or if your pan is large enough two buttered side down pieces of the bread.
Add roast beef evenly over both sandwiches. Add the onions evenly over both sandwiches.
Add the top to the sandwich and press down a bit. Cook on both sides until sandwiches are golden brown.
