Simple, and delicious. If you take this to school or work to share you, my friend, will be very, very popular.
2 c flour
2 c sugar
2 sticks butter, room temp
1 c sour cream
1 tablespoon baking powder
1 ½ t vanilla extract
1/4 teaspoon salt
¼ cup sugar
1 T cinnamon
1 T chopped pecans
1 T brown sugar
2 1/2 T powdered sugar
Preheat the oven to 350 degrees. Butter and flour a Bundt pan.
For filling mix filling ingredients in a bowl and set aside.
In a large bowl cream butter and sugar together until lightened in color and texture with an electric hand mixer. Beat in one egg at a time. Mix in vanilla extract. In another bowl mix baking powder, flour and salt. Mix well with folk. Add the flour mixture to the batter in two batches. Mix after each addition just until combined.
Pour half the batter into prepared Bundt pan. Sprinkle in prepared filling, and pour the rest of the batter over the top.
Bake for 50 minutes or until a toothpick inserted into the cake comes out clean. Let cake cool completely. Pour powdered sugar into a strainer and tap the side over coffee cake. Enjoy.
