Coffee Cake Donuts are a little bit of something for everyone. Cake lovers. Check. Donut lovers. Check. Plus there is no frying involved. I know you are questioning if you are at the right website. Seriously though, I don’t like most “baked” donuts but these are really good. I like the sweetness of the donut but they’re not too, too sweet. I’ve always been a fan of a crumb topping and a little bit of glaze never hurt anybody. Grab a cup of coffee or some milk and it’s on.
Coffee Cake Donuts
1 c all purpose flour
1/2 c milk
1/4 c sugar plus 2 T more sugar
1 egg, room temperature
1 T butter, room temperature
1 1/4 t vanilla extract
1 t baking powder
1/2 t salt
1/2 c all purpose flour
1 T melted, cooled butter
1 T brown sugar
1/8 t cinnamon
1/2 cup powdered sugar
1/2 T milk
Preheat our oven to 330 degrees Fahrenheit. Brush a little vegetable oil or melted butter, in each of the donut cut outs of donut pan. Set aside.
Add crumb topping ingredients to a bowl and whisk together with a folk. Once it mixed use hands to crumble. Set aside.
Add powdered sugar and whole milk to a bowl. Whisk it with a folk until it forms a glaze. Set aside until donuts are done.
In another bowl add all donut ingredients. Blend together with electric mixer, scrapping down bowl when necessary. Don’t over mix.
Pour batter evenly into measuring cup with a spout. Sprinkle crumb topping evenly over batter, pressing some gently into the batter.
Bake for 15 -18 minutes, let them cool in the pan for five minutes, move them to a cooling rack and let them cool some before drizzling on the glaze.
Drizzle glaze evenly over the donuts with a spoon. Enjoy.
