EJ, who happens to be a fantastic math and science teacher, and I have some fun in the kitchen. She shows us how to make her aunt’s family famous pasta salad. It’s a lot of chopping but the only thing that needs to cook is the pasta so it’s super easy to make. This goes well with ribs, burgers or grilled chicken. It’s also perfect for a labor day bbq because it can be made ahead.
Aunt Tiny’s Pasta Salad
Serves 6 – 8
8 oz rotini or macaroni cooked according to package directions
¾ cauliflower, broken into bite size pieces
¾ c broccoli, cut into bite size pieces
½ cucumber, sliced and cut into 4ths
20 grape or cherry tomatoes cut in half
¼ c black olives sliced
¾ c of sliced and cubed Fully Cooked Smoked Sausage
¾ c of sliced and cubed Pepperoni sausage
4 oz sharp cheddar sliced into cubes
4 oz pepper jack sliced into cubes
1 c Zesty Italian Salad Dressing (or more to taste)
2 t salad supreme salad seasoning
Mix everything in a big bowl, cover with plastic wrap and let chill two hours before serving. Enjoy.
